| The Winery Everything is done to keep fruity and freshness to the wines Up to now, Benoît Viot has settled his winery in the building of the Domain Maspiquet in Grabels. He has started to renovate the winery in Saint Gély where he will soon make his wine. The product of each plot is vinified separatly in small vats. The favourite method is the traditional punching of the cap to get soft extraction. We try to keep the temperature over 25° to coat the tannins. Everything is done to keep the fruity and the freshness to our wines. Sulphites are used in very small quanties after the malo-lactic maceration. Our wines are kept separated as long as possible till they are blended between Febuary and March. They are matured in vats for 6 or 12 months. Only Gueule de Loup is matured in barrels for a year..
